SO! We are going to Idaho/Oregon this weekend and I had a lot of stuff in the fridge that needed to be cooked before we left…so I decided to make a tomato pie. It came out GREAT!!!

Step 1: Bake frozen pie crust on 350 for about 5-10 minutes so the crust isnt soggy when you put the filling in. DONT BROWN IT!
Step 2: Sautee onions and red bell pepper on low so they caramelize. Add a dash of Braggs for saltyness.
Step 3: Cut baby tomatos in half and sautee with a dollop of honey and salt to taste
Step 5: Layer onions on the bottom of the pie crust. top with diced fresh basil. Add tomatos on top making sure to leave the juices in the pot (you dont want soupy soggy pie)
Step 6: Mix tomato juices with veganaise (or mayo if you want) and pour over pie.
Step 7: Put cheese on top. I chose gouda and then crumbled some goat on there too!
Step 8: Bake until the crust starts to brown and the cheese is all melty
Step 9: ENJOY!!!!!!!
